Dad's Potato Soup


My dad was famous for a few entrees in our house. One of them was Potato Soup..I remember watching him make it and loving how it made the house smell.

Tonight, for the first time ever..I made it all by myself. If my dad is looking down right now, he's so so jealous :) He loved his potato soup.

It's a very simple recipe, and anyone can make it, its just for some reason I never did at my own house. I think I just enjoyed watching him make it. I dunno.

So anyway, I made it, and the smell and everything else reminded me of good times when I was younger, which was nice.

Here's the recipe in case you want to give it a try:

Simple Potato Soup

Ingredients:

1 Stick of Butter
4-5 Large Russet Potatoes (peeled and cut in med sized chunks)
2 Cans of Evaporated Milk
1 Onion (diced)
Salt & Pepper


Combine the stick of butter in a sauce pan with the diced onions and saute on low for around 5 minutes until the onions are tender (don't brown). Then add the potatoes to the sauce pan and add just enough water too cover the potatoes. Gently boil until potatoes seem tender then add the cans of evaporated milk. Simmer for around 15 minutes once you've added the milk. Add salt and pepper to taste at any time during the process.



* I always thicken mine up with a few crackers crushed into it. Yum!


There are a lot of other versions out there that add quite a few more ingredients, but I like it simple..just how my dad did. It's a wonderful dinner for a cold night.

He only liked bacon on 3 things..

- His burgers
- On a BLT sandwich
- With a big breakfast on Sunday Morning

I've heard of a "loaded baked potato soup" that has a lot of ingredients just liked a loaded baked potato like sour cream, bacon, chives..etc. It sounds good..but also a little heavy? ;)

Barb likes potato soup so will share this with her. Her and grandma will make it I bet. Will I eat it? Not a potato soup man myself. I am such a pickie eater. :)
